- Después de haber tenido los saltamontes a remojo toda la noche, al ser posible 24 horas, los lavamos y los ponemos en una olla a cocer.
- Una vez los tenemos cocidos los escurrimos y secamos para no mojar el aceite de la sartén.
- Mientras se escurren pelamos y cortamos los ajos, cortamos a cubos el chile serrano y la cebolla y, le quitamos a los saltamontes las alas y las piernas.
- En una sartén o cazuela baja ponemos dos dedos de aceite para freír y, cuándo esté caliente echamos todo excepto los chapulines.
- Una vez esté todo dorado y bien hecho lo retiramos del fuego con una espumadera para escurrir el aceite.
- Echamos entonces los chapulines y vamos moviendo hasta que estén crujientes y dorados del todo. Preparamos un plato o fuente con papel de cocina y, cuando los saquemos del fuego los dejamos escurrir sobre el papel para que empape el aceite.
- Ponemos en un plato con limón, la cebolla, chile... y sal.
